This recipe was highly recommended to me by a gf in my bakers guild. Having made lemon curd many many many times before I didn’t think this was going to be a game charger . Boy was I wrong ! I’m so glad my gf was persistent that I make it. Wowza ....the right balance of tart & sweet ,but bcz it’s put through a fine mesh sieve it’s beyond silky and smooth. This is now officially my fav recipe for lemon curd.
I would highly recommend using salted butter .
