The Brewers may be headed to LA now, but I'm in a Milwaukee mood and it's National Cheese Curd Day!
Wisconsin has a rich dairy farming history, and a number of cheese factories that were established by European immigrants. Curds are a byproduct of the cheesemaking process, and someone thought it could be a snack of its own.
The Wiskerchen Brothers ran ads in 1961, but it wasn't until 1968 that they became a major product, through the Ellsworth Cooperative Creamery, making Ellsworth the "Cheese Curd Capital of Wisconsin."
You start with the squeaky cheese, and here's a recipe to air fry.
