Humans have used chili pepper and other spices for thousands of years, but it seems to me the hot sauce game has improved greatly in recent years.
Shows like Hot Ones may have increased interest and marketability, I think. Adding flavors to the fire more.
A favorite of mine comes from a local place, Middlegate Station. Hickory Hot Pepper.
I've never cared for Tapatio or Tobasco, but Cholula isn't bad.
