Feed Me: Squash

 


We got a big one!

So I found this apparently classic Southern squash casserole recipe.

But then we have all this pasta, so wanted to utilize that, and found a pureed creamy sauce.

"Once the squash has finished roasting, puree it with the garlic and ricotta cheese until smooth."

Mmm, this is gonna be good.
