Yum, Greek food. This is lahanika me avga (baked vegetables with eggs) - it's a ridiculously easy and low effort dish, so will definitely be getting a try-out.

Here's something a bit more hot-weather suitable - charred sardines with garlic and chili. I don't actually like fish, but that big ball of burrata will do for me - here's that recipe too.
