Salsa
2 cups grape tomatoes, quartered
1/2 cup diced red onion
1/4 cup green onion
1/4 cup diced jalapenos
1/4 cup cilantro
1 teaspoon lime juice
Mix in a small bowl and refrigerate.
Quesadillas
2 cups cooked shredded chicken (add Badia taco seasoning to give it a kick)
2 cups shredded Mexican cheese
1 cup shredded Pepper Jack cheese
1 can hominy (drained)
3 tablespoons vegetable oil (as needed)
Cook tortillas in a skillet or nonstick griddle over high heat, about one minute per side. On a separate plate, layer one cooked tortilla with a mixture of cheeses, chicken and hominy (as much or little as you prefer). Top with another cooked tortilla.
Heat oil in the same skillet and add the quesadilla. Cook about two minutes per side. Cut into quarters and serve with fresh salsa, fresh guacamole, sour cream and margaritas.
