Continuing Guacamole Day!
It is a traditional Mexican dish, created by the Aztecs 500 years ago.
They would mash avocados with tomatoes, wild chiles and salt, using a mortar and pestle called molcajete.
It's also Mexico's Independence Day today, and I found "the most patriotic dish of the celebration" is Chiles en Nogada.
