I learned of this today in my follow up of Ramadan, and found that carob juice is widely popular during fasting as it is high in fiber, protein, and antioxidants.
The powder can also be used as a substitute for chocolate. Similar taste, no caffeine. And no theobromine, which is what makes chocolate dangerous for some animals. It can be used as an energy-rich feed for livestock.
The seeds are used to make a gum as a thickening agent in food processing.
In Lebanon, they make a syrup known as haroupomelo. This can then be stretched and pulled into a toffee-like candy called pasteli.
