Occasional cooks: why are all the good things so bad ?

These are crispy, smashed roast potatoes, and they look divine.

My dad used to do these potatoes - he'd cube them quite small, then roast them in a dish with melted butter, breadcrumbs and parmesan. So good, but then he went on a health kick and stopped making them.

I choose to believe that at least potatoes and butter are regular, unprocessed foods, so you're not eating a whole load of high-sodium, e-number saturated garbage - that counts for something, right?

How do you like to take the vegetable that's probably the least nutritious, and make it even worse for you?
