Everything you need to know about comte - the main thing I need to know is, do I have any, or should I buy more?

(Has comte ceased looking like a real word to everyone else?)
Both those recipes are the annoying ones that require more egg yolks than whole eggs, leaving you with egg whites in the fridge.
Personally, I'm happy to take my comte on a nice cracker.
