Occasional cooks: ridiculous comfort food

We're out of lockdown now, but my go-to recipe website hasn't caught up yet, with another list of ridiculous lockdown feasts, very much in the winter comfort food style.

Nacho cake: Mexican tortilla layer bake with chilli jam? No! this thing looks like an adomination, and is incredibly involved. It would take hours! And it has cooked avocado in it!

Here's something a bit more appropriate for summer - a chocolate-covered coffee semi-fredo. Coffee, chocolate and 'ice cream', all irresistable to me.

This chilled summer garden soup looks pretty great. I love a nice gazpucho - this recipe uses cucumber, zucchini, yoghurt and lots of herbs. I made gazpucho once - it seems quick and easy, but then you spend an age peeling and de-seeding tomatoes. This one requires a lot less fiddly prep. 

Of course, they have to go for one difficult ingredient - nasturtium pods? I think when you include something so niche in your recipe, you should be required to suggest alternatives.
