Last week, I had big plans to bake on the weekend. Then, I went to buy the powdered milk needed for the recipe, but it only needed 20 gm and I could only buy a pack of 500 gm. So then I meant to find a new recipe to make on Saturday, but instead I slept in and then spent the day listening to podcasts, so... no baking has happened.
And no cooking since then, either (so lazy...).
Tonight, I am making nachos. As a single person, I've honed my nacho recipe over time to be something that works for a (large) single serve, and also doesn't involve buying things that I only need to use a small portion of for the recipe, and tossing the rest.

So I skip any beans or beef (maybe this makes this not really nachos), and I skip the sour cream (since I don't make anything super hot either).
I like onion in my salsa and guacamole, but not necessarily raw onion. So I've taken the quick-pickled onions that are used in banh mi and use that technique. Dice onion super-small. Warm up a little lime juice with a sprinkle of sugar, add the onions and let sit until you need it. The onions will be a little softer, and will have lost the super-bitter taste of raw onions, and you can use the juice in your salsa and guacamole - no waste.
