🌺 Red Velvet Box Cookies

Happy August! It's the final stretch towards getting to the fall and what better way to look forward to the change in seasons - and flavors - than with a season-straddling cookie version of a red velvet cake?

1 box red velvet cake mix
2 eggs
1/3 cup vegetable oil
Powered sugar

Combine the first three ingredients into a batter; scoop into balls (not too big) and then roll in powdered sugar until covered. Arrange on a cookie sheet and flatten (not too much or they'll morph into flying saucers) with the bottom of a glass. Bake for 8-10 minutes.
