Hey everyone in What’s on Tonight & Feed Me 👋🏼
I made this jam a few days ago and opened it up this morning for breakfast. It’s very good with the right balance of sweet y spicy. The original recipe that I found on YouTube doesn’t include jalapeños, but I wanted some heat so added (2) diced jalapeños w ribs/pith/seeds removed.
I had an apple avail so peeled, diced up small and added it in. (Adds pectins)
I go by amount of fruit (after peeled, diced etc) in determining how my sugar to use for jam.
From google
“The ratio between fruit and sugar varies: with sweet fruits, it's about 2:1 (2 kilos of fruit, 1 of sugar), while with more bitter fruits like oranges, it should be more like 3:2. If uncertain, it's better to round up with the sugar. The other potential ingredients – lemon and pectin – are found in many jam recipes“
Since I had 4 cups of fruit product , I used 2 cups of sugar.
There’s a lot of leeway on how which herbs , spices , extracts etc you can use to add to this so have fun. Alternatively, if you just want fruit only that is totally fine.
I used lime , a smidge of cinnamon, and a hit of bourbon.
Enjoy!
