🍅Feed Me: Cherry Tomato Cream Sauce w Chicken

Happy Saturday everyone **waves**

My neighbor’s garden has been outta control with cherry tomatoes that we’ve both met our quota on canning tomato sauce. This recipe makes use of super sweet summer cherry tomatoes and can be made as is or as complex as you’d like it to be.  I opted to add heavy cream, basil , thyme, rosemary and diced chicken thighs. We had a full house last night and this easily fed 7 people (there was also salad y bread).

Ingredients
  • 1 pound (450g) dry pasta
  • Kosher salt
  • 4 medium cloves garlic, thinly sliced
  • 6 tablespoons (90ml) extra-virgin olive oil, divided
  • 1 1/2 pounds cherry tomatoes (about 2 pints; 675g)
  • 1 ounce fresh basil leaves, roughly chopped (about 1 cup; 30g)
  • Freshly ground black pepper
  • Parmesan cheese, for serving
